Completion of secondary School
Formal culinary training/ cooks trade certificate or equivalent,
Must have at least four years experience in a commercial kitchen.
Must be able to
run a busy gourmet kitchen in the absence of the head chef; Menu
planning and specialty food prep.
Must be able to demonstrate food costing skills
Must be able to make soups, stocks and sauces.
Must demonstrate
and have good knowledge of all departments in a kitchen:
Butchery,
fish, desserts, baking etc
Must be able to supervise and train junior members of a kitchen.
Must be able to solve problems in the absence of the head Chef.
Demonstrate superior food handling and food storage skills.
Excellent cleaning skills and standards.
Food safe.
Fluent in English: writing, reading and speaking.
